Aperol Flip

The Aperol Flip is a rich, creamy, and bittersweet cocktail that reimagines the popular Aperol Spritz with a decadent, frothy texture achieved by shaking with an egg white. It is a modern riff on the classic "flip" cocktail family (traditionally spirits, sugar, and egg) that often blends the bright orange, herbal notes of Aperol with gin, citrus, and sometimes sparkling wine.

How It's Made

1. Combine the following in a dry cocktail shaker:

  • 1 oz Aperol
  • Juice of 1/2 lemon
  • 1/2 oz agave
  • Egg white

2. Shake once, then add ice and shake a second time.

3. Strain into glass, then top with 2oz champagne or seltzer.

4. Optionally, garnish with a wide swath of orange zest.
